Jonathan Franzen?s Pasta with Kale
We want to make fun of Jonathan Franzen for calling this garlicky pasta ?handsome,? ?private,? ?erotic? and ?virtuous,? but we want to eat it so much that we can?t quite bring ourselves to give him any lip.
This is good food for a working writer: cheap, easy to make, handsome, elegant, nutritionally well-balanced, devoid of saturated fat, private, erotic, virtuous, delicious. I eat it hot the first night and then cold as leftovers for two further dinners and maybe one lunch.
1 lb. fresh kale
1 lb. good dry pasta, ideally Del Verde brand
1 kettle of water with lots of salt
3 medium-size garlic cloves
1/2 cup (or less) extra-virgin olive oil
Salt and pepper to taste
Boil water in a kettle. Peel the garlic and chop it up. Wash the kale, tearing it into pieces roughly the size of playing cards (throw away the lower, woodier two-thirds of the stems), and pile it into a pot. Add a little water, if necessary, to make maybe a quarter-inch on the bottom of the pot. Cover with a lid. Saut? the garlic (and some salt) in the olive oil until the garlic just barely begins to brown; remove from heat. Add pasta to the boiling water and stir it a little. Turn on high heat under the kale and steam/boil it, tossing it once or twice, until it?s full wilted; pour off any excess liquid. When the pasta is al dente, drain it and toss it with the kale, garlic, and oil. Some pepper may be ground over it. Grated cheese, however, is a desecration.
Salman Rushdie?s Lamb Korma
Turns out Padma?s cooking never held a candle to dear old Mom?s. ?If you asked my mother for a recipe,? Salman Rushdie writes, ?she?d say, ?Well, you take some of this and a bit of that, and you stir it for a while and cook it a little more.? But the meals of our childhood are magical memories?the koftas (meatballs), kormas (rich curries with yogurt), and delicious desserts. Lamb korma is one of [my son] Milan?s absolute favorites, and mine as well.?
"1? cups chopped onion
1 cup clarified butter (melted and skimmed of milk solids)
4 to 5 large cardamom pods (available in the spice section)
10 to 12 small cardamom pods
2 lb lamb, cubed
6 to 8 garlic cloves, crushed

1. Brown onions in butter until deep golden. Remove with a slotted spoon and pulse in a blender to form a paste. Crush cardamom; mix into paste.
2. Add meat to pan; stir over medium-high. After a few minutes, add garlic, ginger, coriander, chili powder, and salt. Stir for a couple of minutes. Mix in yogurt. Cover and cook over very low heat, 1 to 1? hours.
3. About 5 minutes before korma is ready, add onion-cardamom paste and saffron so it can be absorbed by the meat and gravy.
Salman?s Tips:
Trim all excess fat first, then cut the meat into medium-size cubes, deboning some pieces and keeping others on the bone.
After 30 minutes, you may need to add some water. But if your gravy is too watery, you added too much! Turn the heat up and boil some off. A korma should have a thick sauce."

At this post holiday season, the refrigerators of the nation are overstuffed with large masses of turkey, the sight of which is calculated to give an adult an attack of dizziness. It seems, therefore, an appropriate time to give the owners the benefit of my experience as an old gourmet, in using this surplus material. Some of the recipes have been in my family for generations. (This usually occurs when rigor mortis sets in.) They were collected over years, from old cook books, yellowed diaries of the Pilgrim Fathers, mail order catalogues, golf-bags and trash cans. Not one but has been tried and proven?here are headstones all over America to testify to the fact.
Very well then. Here goes:
1. Turkey Cocktail: To one large turkey add one gallon of vermouth and a demijohn of angostura bitters. Shake.
2. Turkey ? la Francais: Take a large ripe turkey, prepare as for basting and stuff with old watches and chains and monkey meat. Proceed as with cottage pudding.
3. Turkey and Water: Take one turkey and one pan of water. Heat the latter to the boiling point and then put in the refrigerator. When it has jelled, drown the turkey in it. Eat. In preparing this recipe it is best to have a few ham sandwiches around in case things go wrong.
4. Turkey Mongole: Take three butts of salami and a large turkey skeleton, from which the feathers and natural stuffing have been removed. Lay them out on the table and call up some Mongole in the neighborhood to tell you how to proceed from there.
5. Turkey Mousse: Seed a large prone turkey, being careful to remove the bones, flesh, fins, gravy, etc. Blow up with a bicycle pump. Mount in becoming style and hang in the front hall.
6. Stolen Turkey: Walk quickly from the market, and, if accosted, remark with a laugh that it had just flown into your arms and you hadn?t noticed it. Then drop the turkey with the white of one egg?well, anyhow, beat it.
7. Turkey ? la Cr?me: Prepare the cr?me a day in advance. Deluge the turkey with it and cook for six days over a blast furnace. Wrap in fly paper and serve."

LOS ANGELES (AP) ? "The Dark Knight Rises" stayed atop the box office for the second straight weekend, making just over $64 million. But it's lagging behind the staggering numbers of its predecessor, 2008's "The Dark Knight."
The final piece in Christopher Nolan's Batman trilogy has now grossed more than $289 million in its first 10 days in theaters. It dropped 60 percent from its opening weekend of $160.9 million.
By comparison, "The Dark Knight" took a 53 percent drop in its second weekend with a gross of nearly $75.2 million and a 10-day cumulative gross of $313.8 million.
Dan Fellman, head of distribution for Warner Bros., declined to comment on the Sunday estimates again out of respect for the victims of the Aurora, Colo., shooting that left 12 people dead and another 58 injured at a midnight showing of the film on opening night.
But people are still going to the movies, and they did so even last weekend, said Hollywood.com analyst Paul Dergarabedian. If anything hurt the numbers for all movies this weekend, he said, it was Friday night's opening ceremony of the 2012 Summer Olympics in London, which drew a record-setting 40.7 million viewers in the United States.
"For a film that opened as big as this did, considering the situation and what happened last weekend and all that, I would say this is a very strong showing," Dergarabedian said. "It's made almost $300 million in North America and its mid-week (attendance) is very strong. It made $19 million last Monday."
In second place this weekend was the animated family film "Ice Age: Continental Drift," which is still going strong in its third week. It made $13.3 million for a domestic total of nearly $114.9 million. The fourth movie in the 20th Century Fox franchise features the voices of Ray Romano, Denis Leary and Queen Latifah.
Both of the new movies in wide release opened weakly. The 20th Century Fox comedy "The Watch" came in third place with $13 million. Big-name comic actors Ben Stiller, Vince Vaughn and Jonah Hill play a group of guys who come together to form a neighborhood watch; despite the star power, the film was panned critically, receiving only 14 percent positive reviews on the Rotten Tomatoes website.
And "Step Up Revolution" ? the fourth film in the dance franchise, which is set in Miami this time ? opened at No. 4 with $11.8 million. Richie Fay, Lionsgate's president of domestic distribution, said the number was a little disappointing because the studio expected it to end up in the mid-teens. But the core audience for the previous three "Step Up" films showed up: 63 percent was female and 71 percent was under age 24.
"The exit polls indicated that the audience that came out to see it liked it," Fay said. "Hopefully they'll get around to talking about it after they've had their fill of the Olympics. Someone suggested that that might feed into the gross ? gymnastics and dance are so similar."
As for new movies in limited release, Fox Searchlight's "Ruby Sparks" grossed $151,881 in 13 theaters for a strong per-screen average of $11,683. Since its opening Wednesday, it's made $191,717. The romantic comedy from the directors of "Little Miss Sunshine" stars Paul Dano as a novelist with writer's block who creates his dream girl, played by Zoe Kazan, who also wrote the script.
And LD Entertainment's "Killer Joe," the NC-17-rated crime thriller from director William Friedkin, made $37,864 at three theaters in Manhattan for a $12,621 per-screen average. In his darkest performance yet, Matthew McConaughey plays a Dallas police detective with a side gig as a hit man. Emile Hirsch, Thomas Haden Church, Gina Gershon and Juno Temple co-star as the lowlifes who play crucial roles in this twisted plot.
Estimated ticket sales for Friday through Sunday at U.S. and Canadian theaters, according to Hollywood.com. Where available, latest international numbers are also included. Final domestic figures will be released Monday.

Syria SNC to mull transitional government 'within weeks'
DUBAI (Reuters) - The head of the Syrian National Council (SNC), the main umbrella group for opponents of President Bashar al-Assad, said on Sunday that talks would be held within weeks to form a transitional government that would in time replace Assad's ministerial team.
Abdelbasset Sida, president of the SNC, said such a government would run the country between Assad's ousting and democratic elections. Most of its members would be drawn from the opposition, but some members of the current Assad government might also be included, he added.
"This government should come about before the fall (of Assad) so that it presents itself as an alternative for the next stage," Sida told Abu Dhabi-based Sky News Arabia television in an interview broadcast on Sunday.
"The committees that we have set up have their own schedules. Obviously, the matter should be concluded within weeks."
"There are some elements in the current regime who are not bloodstained, who were not part of major corruption cases. We will discuss (including them) with other parties, but there should be a national consensus to accept them."
However, criticism about the SNC's legitimacy may complicate its efforts to form a transitional government.
It clearly backs the Free Syrian Army, despite having not always overtly supported it in the past.
But it has sometimes struggled to overcome internal divisions and critics have accused the Istanbul-based organization of being out of touch, overly influenced by Turkey, and not fully representative of the opposition.
INITIAL INVOLVEMENT OF TLAS RULED OUT
Visiting Abu Dhabi to meet United Arab Emirates officials, Sida did not say when exactly a transitional government might be formed, telling a news conference in the early hours of Sunday that he had discussed the idea with Sheikh Abdullah bin Zayed al-Nahayan, UAE's foreign minister.
The SNC has set up two committees to discuss the idea; the first will communicate with the Free Syrian Army, the major rebel military group, while the second will deal with all other opposition groups, said Sida.
Last week, Brigadier General Manaf Tlas, one of the most senior defectors to flee Syria, said he would try to help unite Syria's fragmented opposition inside and outside the country in order to agree a roadmap for a power transfer.
Sida said he welcomed Tlas' defection, but said the general could not be involved in the early stages of organizing a transitional government.
"The dialogue and coordination have to first be with the Free Syrian Army and the various members of the Syrian opposition movements, and after that if there are some roles to be played by members who have defected, then so be it - but with the condition that there is an agreement between the Syrians about that."
Sida also ruled out the possibility of Tlas becoming head of a transitional government. "This has to be a person who can lead a national government and who has been committed to the revolution since the beginning," he said.

JERUSALEM?Speaking against the backdrop of the historic Old City, Mitt Romney signaled he supports Israel's right to "defend itself" against its enemies and said "any and all measures" should be considered in the world's efforts to stop Iran from developing a nuclear weapon.
The Republican candidate said preventing a nuclear Iran should be America's "highest national security priority." And while he argued that diplomatic efforts should continue, Romney insisted that all options should be on the table in dealing with Iran, including a military strike.
"We should employ any and all measures to dissuade the Iranian regime from its nuclear course, and it is our fervent hope that diplomatic and economic measures will do so," Romney said in an outdoor speech at Mishkenot Sha'anamim, a cultural center in Jerusalem. Romney pushed back against criticism that those arguing in favor of leaving the military option open are "reckless and provocative and inviting war." "The opposite is true. We are the true peacemakers," Romney said.
He argued that the threat of military action would put more pressure on the ayatollahs in Iran, whom he accused of "testing our moral defenses."
"They want to know who will object and who will look the other way," Romney said. "My message to the people of Israel and the leaders of Iran is one and the same: I will not look away, and neither will my country."
In a message sure to appeal to Jewish voters, with whom Republicans are aiming to make inroads ahead of November's election, Romney repeatedly emphasized the "shared values" and "shared interests" between the United States and Israel.
Romney avoided directly criticizing President Barack Obama but slipped in a dig at his Democratic rival, arguing that public differences between the U.S. and Israel only embolden Israel's enemies.
"We cannot stand silent as those who seek to undermine Israel, voice their criticisms.? And we certainly should not join in that criticism," Romney said. "Diplomatic distance in public between our nations emboldens Israel's adversaries.
By history and by conviction, our two countries are bound together.?No individual, no nation, no world organization, will pry us apart. And as long as we stay together and stand together, there is no threat we cannot overcome and very little that we cannot achieve."
Romney is dining with Israeli Prime Minister Benjamin Netanyahu on Sunday night. On Monday, he'll headline a major fundraiser for his campaign among top Jewish supporters, many of whom were in the audience for Sunday's speech. Among those in attendance: Las Vegas casino magnate Sheldon Adelson, who has contributed millions of dollars to a pro-Romney super PAC.
On Monday afternoon, Romney heads to Poland, the final stop on his weeklong overseas tour.
